Proces praženia, druhy praženia

Stupeň praženia kávových zŕn je jedným z najdôležitejších faktorov, ktoré určujú chuť kávy. Pred pražením sú zelené kávové zrná mäkké na zahryznutie, vonia trávnato. Proces praženia kávy transformuje tieto surové zrná na výrazne aromatické, chutné a chrumkavé zrná, ktoré poznáme ako kávu.

Do komplexnej rovnice, ktorá určuje chuť vašej kávy, samozrejme vstupujú ďalšie faktory. Dve odrody kávy, pochádzajúce z rôznych krajín pôvodu a

lebo pestované v rôznych prostrediach, budú pravdepodobne chutiť celkom odlišne, aj keď sú pražené na rovnakej úrovni (najmä na svetlej až strednej úrovni praženia). Na chuť má vplyv najmä čerstvosť kávy, spôsob spracovania, mletie a spôsob varenia. Stupne praženia poskytujú kompletného sprievodcu spektrom chutí aké môžete pri jednotlivých stupňoch očakávať.

Všeobecne môžeme stupne praženia kávy kategorizovať takto:

 

Svetlé praženie

Takto pražená kávy je svetlohnedej resp. škoricovej farby, bez oleja na povrchu zŕn. Svetlo pražená zrná majú chuť po obilí a výraznú kyslosť. Svetlo pražené zrná si zachovávajú originálne

chute vo väčšej miere ako tmavšie pražené kávy. Taktiež zadržiavajú viac kofeínu v kávovom zrne.

 

Svetlo pražené zrno zvyčajne dosahuje vnútornú teplotu od 180°C do 205°C . Pri približne 150 °C – 180 °C  zrno praskne a rozšíri sa. Toto sa nazýva 1st crack (prvé prasknutie).

Bežné názvy v kategórii svetlé praženie sú Light City, Half City, Cinnamon Roast (pražené až tesne do prvého prasknutia) a New England Roast (populárne praženie až po prvé prasknutie).

Takto pražené zrná sú skvelé najmä na prípravu kávy alternatívnymi spôsobmi ako je Hario V60, Chemex.

 

Stredné praženie

Stredne pražené kávové zrná sú stredne hnedej farby a majú väčšie telo ako svetlo pražené. Rovnako ako svetlé praženie nemajú na povrchu žiadne olejové škvrny. Pri strednom pražení sa stráca obilninová vôňa, so sviežejšou chuťou a začínajú prevládať čokoládové, orieškové, kakaové tóny. Kofeínu obsahujú viac v porovnaní s tmavo praženými zrnami.

Stredne pražené zrná dosahujú vnútornú teplotu medzi 210 °C a 220 °C medzi koncom prvého prasknutia a tesne pred začiatkom 2nd crack, teda druhého prasknutia.

Medzi bežné názvy stredného praženia patria Regular roast, American roast, City roast.

 

Stredne tmavé praženie

 

Stredne tmavo pražené zrná majú sýtejšiu a tmavšiu hnedú farbu a na povrchu zŕn sa začínajú objavovať olejové škvrny. Stredne tmavo pražené zrná majú mohutnejšie telo v porovnaní so svetle alebo stredne praženými zrnami.

Zrno je pražené od začiatku po stred druhého prasknutia na asi 225 °C – 232 °C. Chuť a aróma procesu praženia začína byť zreteľná.

Medzi najbežnejšie názvy stredne tmavého praženia patria Full-City Roast (pražená po začiatok druhé prasknutia), After Dinner Roast a Vienna Roast (pražené do polovice druhého prasknutia).

 

Tmavé praženie

 

Tmavo pražené kávové zrná sú tmavohnedej farby ako horká čokoláda alebo niekedy takmer čierne. Na povrchu kávy sú zreteľné olejové oká, typické pri príprave tmavo praženej kávy.

Chuť kávy je zatienená procesom praženia. Káva bude mať všeobecne horkú a dymovú alebo dokonca spálenú chuť. Množstvo kofeínu je podstatne znížené.

Na dosiahnutie úrovne tmavého praženia sa kávové zrná pražia na vnútornú teplotu 240 °C – 250°C až po koniec druhého prasknutia a moment neskôr. Málokedy sa pražia na teplotu presahujúcu 255 °C, vtedy už je telo zŕn tenké a chuť sa vyznačuje príchuťou dechtu a dreveného uhlia.

Tmavo pražené zrná majú veľa názvov. Medzi najbežnejšie označenia tmavého praženia patria French Roast, Italian Roast, Espresso Roast, Continental Roast, New Orleans Roast, a Spanish Roast.

 

Toľko v skratke o jednotlivých druhoch praženia. Koniec koncov je to všetko o chuti a aróme, ktorá nám vyhovuje. Môžete uprednostniť svetlejšie praženie ráno (s väčším obsahom kofeínu) a tmavšie neskoršie cez deň. Vybrať kávu s optimálnou úrovňou praženia je výslovne osobnou preferenciou. U niekoho môže byť ovplyvňovaná aj národnou alebo geografickou preferenciou.
